Healthy Shepherd’s Pie

Re-creating a traditional Shepherd’s Pie, into a clean, nutritious meal!

What you’ll need

Serves 4-6

Filling:

  • 500g lean beef mince
  • 1 onion, diced
  • 2 cloves garlic, crushed
  • 2 carrots, peeled and diced
  • 1/2 cup peas
  • 5 button mushrooms, chopped
  • 2 handfuls fresh spinach
  • 410g can crushed tomatoes (check label for no added sugar)
  • 1 tsp rosemary
  • 1 tsp thyme
  • Salt & pepper

Topping:

  • 1 medium sweet potato, chopped
  • 2 tbsp coconut milk (milk of choice)
  • 1 tsp macadamia oil
  • 1/2 tsp paprika
  • Salt & pepper
  • Protein cheese, grated (optional)

 

How to make!

  1. Preheat oven to 180’c. Meanwhile steam chopped sweet potato.
  2. Add mince, onion and garlic into a pan and cook over medium heat.
  3. Once cooked, add can of tomatoes, carrot, peas, mushrooms, rosemary, thyme, salt and pepper and cook for a further 2 minutes.
  4. Stir through spinach, and transfer mixture into an oven safe dish.
  5. Once soft, remove sweet potato from steam.
  6. In a bowl combine sweet potato, coconut milk, macadamia oil, paprika, salt and pepper and mash until a smooth consistent mixture is formed.
  7. Spoon sweet potato mash onto filing mixture and evenly spread and top with protein cheese if desired.
  8. Bake for 30 minutes.
