Healthy Gingerbread man

Balance out all of the delicious festive foods the silly season has to offer with these ‘healthified’ Healthy Gingerbread Men!

What you’ll need

  • 2 cups almond meal/flour
  • ½ tsp cinnamon
  • ½ tsp ground ginger
  • ½ tsp nutmeg
  • ½ tsp baking powder
  • Pinch of salt
  • 1 tsp natural vanilla extract
  • ¼ cup coconut oil
  • ¼ cup natural maple syrup
  • 1 egg

How to make!

  1. Preheat oven to 160’c.
  2. Combine vanilla extract, coconut oil, maple syrup and egg in a food processor and blend until well combined.
  3. Add dry ingredients to food processor and process until a soft dough is formed.
  4. Roll mixture, using a rolling pin, until an even thickness of approximately 3mm.
  5. Cut into desired shapes and bake for 15-20 minutes.
